300 g frozen mango
125 g Yoghurt
40 g of speculoos / Biscoff®

For an even more succulent version, replace the yoghurt with 2 scoops of vanilla ice cream. You can also replace the gingerbread with speculoos biscuits. You can play with the flavours by replacing the mango with frozen raspberries, peaches, melon, etc.
RECIPE STEPS

Allow the mangoes to defrost just enough to cut the pieces in two (widthwise).

Add the gingerbread to the food processing bowl with the metal blade.
Blend for 30 seconds.

Add the yoghurt and the fruit.
Blend for 30 seconds.
Scrape the mixture off the bowl walls with the spatula. Blend for a further 30 seconds.

Eat immediately.
