Prawn Cocktail

100 ml mayonnaise (see recipe)
2 tbsp of french brandy, Cognac
1 tsp tabasco sauce
1 pinch cayenne pepper
4 tbsp tomato sauce
1 tbsp lemon juice
16 prawns
200 g iceberg lettuce
1 lemon, cut into 8 slices
1 bunch chives, finely chopped

Combine all ingredients in food processor mini bowl. Process for 5-10 seconds until well combined.

Shred the lettuce in the Food Processor, using the 4mm blade, into the large bowl.
- 200 g iceberg lettuce

For a shared plate: Place shredded iceberg down the middle of a serving tray. Arrange prawns, spoon over Sauce Marie Rose. Sprinkle with chopped chives and serve with fresh lemon wedges.
For an individual serve: Place shredded iceberg lettuce in a martini glass and arrange prawns on top. Spoon over Sauce Marie Rose, sprinkle with chopped chives and serve with fresh lemon wedges.
