Peel and thinly slice the onions and garlic. Cut the peppers into strips, peel the tomatoes and slice them. Cut the chicken thighs in half.

Preheat the cocotte on high heat on a stove with a drizzle of olive oil, without the lid.
As soon as the cocotte is hot, add the pieces of chicken and brown them on each side for 15 minutes.
Use a non-metallic utensil to turn them over.

Add the onions, peppers, and garlic, then sweat them over medium heat for 5 minutes.

Remove the cocotte from the stove and place it on its pre-installed stand on the Cook Expert. Add the tomatoes, Espelette pepper, thyme and bay leaf. Pour in the white wine, cover and then run the program.

Delicious. We used large pieces of chicken breast instead of thigh and we served with mashed potato.


Really tasty dish especially on a cold rainy evening.Will omit the 125ml of white wine next cook as it was very ‘soupy’ but the broth was delicious. so easy to use the coccette 🙌🏼
