30 cherry tomatoes
200 ml single cream
3 eggs
3 tbsp cornstarch
250 g mozzarella
2 tbsp olive oil
10 leaves of basil

Preheat the oven to 180°C (gas mark 4)
Wash and halve the tomatoes.
Sprinkle them with olive oil then season with salt and pepper.

- 2 tbsp olive oil

Brush 6 individual ramekins with oil.
In the Blender bowl, add the ingredients.
Run the programme:
speed 1/10 seconds then speed 3/20 seconds.
- 200 ml single cream
- 3 eggs
- 3 tbsp cornstarch
- 250 g mozzarella
- 10 leaves of basil

Divide the tomatoes (cut side down) between the ramekins, pour the mixture over and bake for 25 minutes.
To prevent the tomatoes from giving off too much liquid, you can precook them for 30 minutes in a hot oven.
