
Tiramisu gelato

500 g full fat milk
90 g mascarpone
45 g milk powder
110 g caster sugar
100 g egg yolks
30 ml espresso coffee
2 tbsp cocoa

Add milk to a pan and heat on medium-high until starting to simmer. Meanwhile, add the mascarpone, milk powder & coffee into a blender. Add the sugar & egg yolks into a large bowl and whisk until thick ribbon stage. Add the hot milk mixture into the blender and blend for 30 seconds on max. speed. Pour the hot liquid onto the egg yolk mixture, whisking continuously. Add this mixture back into the pan and cook on a low heat, stirring continuously, until the mixture coats the back of a spoon (85 °C). Cool in a cold-water bath. For best results chill the mixture in a sealed container in the fridge until it reaches 10C.

Place the mixture into the Gelato Expert on the gelato setting. The machine indicator light will flash slowly once the desired consistency is reached. Serve the ice cream with a light dusting of cocoa powder on top.
