Thai Green Chicken Curry





2 chillies, sliced and deseeded
0.5 bunch coriander, washed
1 knob ginger
6 garlic cloves, peeled
1 onion
1 stick of lemongrass
1 bunch Thai basil, torn
62.5 ml olive oil
2 chicken breasts, skin off, diced
2 zucchinis, diced
2 tbsp coconut sugar
250 g tomato, diced
250 ml chicken stock
250 ml coconut milk/cream
1 tbsp fish sauce
1 tbsp soy sauce
1 tsp salt
1 bunch coriander
1 zest lime or 2 kaffir lime leaves
2 curry or kaffir lime leaves

Exceptionally tasty.
SO good, definitely one of my favourites, it's also great with Basa fish fillets!
really nice flavours - tastes clean and healthy. I also added bamboo shoots and water chestnuts.
really tasty but chicken did disintegrate a bit!
this tasted fabulous and was only moderately time consuming. will make again
really lovely.
