2 chillies, sliced and deseeded

0.5 bunch coriander, washed

1 knob ginger

6 garlic cloves, peeled

1 onion

1 stick of lemongrass

1 bunch Thai basil, torn

62.5 ml olive oil

2 chicken breasts, skin off, diced

2 zucchinis, diced

2 tbsp coconut sugar

250 g tomato, diced

250 ml chicken stock

250 ml coconut milk/cream

1 tbsp fish sauce

1 tbsp soy sauce

1 tsp salt

1 bunch coriander

1 zest lime or 2 kaffir lime leaves

2 curry or kaffir lime leaves

Place chillies, coriander, ginger, garlic, onion, lemongrass, Thai basil & oil in the Magimix Cook Expert. Run EXPERT programme for 1 minute / speed 18

Wipe down the sides with a spatula. Run EXPERT programme for 5 minutes / speed 3 / 110°C & cook paste.

When timer stops, add the remaining ingredients. Run EXPERT programme for 15 minutes / speed 2A / 110°C.

When timer stops, add juice of 2 limes, serve with steamed rice.
