Spiced sweet potato soup

1 tbsp olive oil
1 onion, roughly chopped
1 leek
3 cm of ginger
2 tsp ground cumin
2 tsp sweet paprika
1 tsp ground coriander
1 tsp cinnamon
2 sweet potatoes
2 parsnips
2 carrots
1 veg stock dice
1 L of water
1 pinch salt
1 pinch pepper
150 g of Greek yoghurt
15 g mint leaves, chopped
10 g coriander leaves, chopped

Place oil, onion, leek, ginger, cumin, paprika, coriander & cinnamon in metal bowl.
Run EXPERT 3min/2A/120 degrees.
- 1 tbsp olive oil
- 1 onion, roughly chopped
- 1 leek
- 3 cm of ginger
- 2 tsp ground cumin

Add sweet potato, parsnip, carrots, water & stock.
Run CREAMED SOUP program.
- 2 sweet potatoes
- 2 parsnips
- 2 carrots
- 1 veg stock dice
- 1 L of water

While soup in cooking, in a small bowl mix yoghurt, mint & coriander
- 150 g of Greek yoghurt
- 15 g mint leaves, chopped
- 10 g coriander leaves, chopped

Once soup has blended season to taste.

Serve into individual bowls & add a dollop of the yoghurt mixture.

tasty soup
It’s ok. I was the only one who ate it, everyone else gave up. I wouldn’t risk it for children (which was my mistake).
