
Raspberry sorbet

450 g raspberries
150 g water
150 g caster sugar
1 tbsp lemon juice

Add the sugar and water into a pan. Heat until boiling. Cool in a cold-water bath. Meanwhile make a raspberry coulis, either by using the Magimix Juice Expert 3 with Extra Press fitted, or by blitzing in a food processor and then passing through a sieve. Add the lemon juice and cooled sugar syrup.
- 450 g raspberries
- 150 g water

For best results, chill the mixture in a sealed container in the fridge until it reaches 10°C or below (3-4hrs).

Place the mixture into the Gelato Expert on the sorbet/ice cream setting. The machine indicator light will flash slowly once the desired consistency is reached.
