90 ml of semi-skimmed milk

13 g of fresh baker's yeast

250 g of bread flour

40 g of sugar

1 egg

50 g of soft butter

1 egg yolk

5 ml of semi-skimmed milk

1 tbsp of pearl sugar

Alternatively, prove the dough in the stainless steel bowl on EXPERT programme 30 minutes / speed 0 / 35°C.

RECIPE STEPS

Add the ingredients (except the butter) in the order listed into the metal bowl. Run the programme.
  • 90 ml of semi-skimmed milk
  • 250 g of bread flour
  • 40 g of sugar
  • 13 g of fresh baker's yeast
  • 1 egg yolk

The programme will stop after one minute. Remove the cap, press Auto and gradually add the butter through the chute while the programme is running.
  • 50 g of soft butter

Transfer the dough to a deep dish and cover with a damp cloth. Leave to rest at room temperature for 1 hour 30 minutes, away from any draughts.

Preheat your oven to 180°C. On a floured work surface, knock back the dough and then divide it into 3 pieces. Roll the 3 dough pieces into sausages of equal length and plait them.

Transfer the plaited brioche onto a baking tray covered with baking paper. Mix the egg yolk with the milk and brush over the dough. Sprinkle over the coarse sugar and leave to rest for 30-45 minutes.
  • 5 ml of semi-skimmed milk
  • 1 tbsp of pearl sugar

Bake for 30 minutes.
