
Pitta Dough




6 pieces
150 g strong bread flour
100 g plain flour
160 ml water (approx. 40°C)
0.5 tsp salt
7 g dried yeast
1 tbsp sunflower oil

Add all the ingredients, apart from the flours, into a jug and mix.

With the dough blade in place, add both of flours into the main bowl. Press AUTO to start. Then slowly pour the liquid into the bowl through the middle feed tube. As soon as the dough forms into a ball and starts rolling around the sides of the bowl, allow to knead for another 30 secs or so. Wet your hands then form the dough into a ball, remove the dough blade and allow to prove inside the bowl with the lid on for around 15 mins in a warm location.

Gently remove the dough using the spatula onto a floured surface and portion into 6 pieces, again using the spatula to cut. Gently stretch or roll out into approx. 5mm thick pittas.

Place the pittas onto 2 pieces of baking paper (3 on each piece), and 2nd proof for 10 mins.

Bake at 250 °C for 3 mins, ideally on a pre-heated baking stone or heavy-duty oven tray.
