
Lemon Drizzle Biscuits




Equipment
Baking tray
12 pieces
200 g of plain flour
60 g of light brown sugar
60 g of caster sugar
1 pinch of salt
1 egg
0.5 tsp of baking powder
120 g of soft butter (cut into cubes)
1 zest lemon
1 lemon juice
150 g of icing sugar
2 sprigs of thyme (optional)

Add all the ingredients for the biscuits into the large food processor bowl. Process for 5 seconds until fully combined.
- 200 g of plain flour
- 60 g of light brown sugar
- 60 g of caster sugar
- 1 pinch of salt
- 1 egg
- 0.5 tsp of baking powder
- 120 g of soft butter (cut into cubes)
- 1 zest lemon

Roll into small balls. Refrigerate them for at least 30 mins.

Use a fork to press them down and bake a 180°C for 9 mins.

To make the drizzle combine the icing sugar and lemon juice in a bowl.
- 1 lemon juice
- 150 g of icing sugar

Take the biscuits out of the oven and allow to cool for at least 15 minutes before drizzling the icing over them.

Sprinkle with some thyme for a contrast in colour and flavour.
