2 garlic cloves

1 tbsp of tomato concentrate

2 egg yolks

1 pinch of cayenne pepper

1 g of saffron

200 ml of olive oil

1 pinch of salt

1 pinch of pepper

Chef's tip

you can replace the saffron with paprika. Accompanies fried or poached fish, fish soup...

RECIPE STEPS

Prepare the mayonnaise with the emulsifier accessory, adding the garlic, saffron and chili.
  • 2 garlic cloves
  • 2 egg yolks
  • 1 pinch of cayenne pepper
  • 1 g of saffron
  • 200 ml of olive oil

Add the tomato concentrate and give a few pulses before running for 20 seconds to homogenize the sauce.
