0.5 tsp grated nutmeg
60 g of Comté cheese
1 knob butter
200 g of crème fraîche
900 g of chicory
6 slices smoked salmon

Pour 0.5L water into the metal bowl and fit the steamer basket.

Wash the endives and remove the small end (that makes it bitter) along with the outside leaves. Place the endives into steamer basket.

Season with salt and pepper. Whilst the program is running, turn the endives once.

When the endives are cooked, drain well.
Heat the oven to 180°C.

Roll each head of witlof in a slice of smoked salmon and arrange in a greased casserole dish.
- 1 knob butter
- 6 slices smoked salmon

Mix the ingredients with a tablespoon of the endive cooking water.
- 1 tbsp lemon juice
- 0.5 tsp grated nutmeg
- 200 g of crème fraîche

Pour the sauce over the endives.
Cover in grated gruyère and bake for 15 minutes.
- 60 g of Comté cheese
