150 g of french blue cheese
60 g of dried raisins
2 red apples
100 g shelled walnuts
300 g red cabbage
3 tbsp cider vinegar
3 tbsp lemon juice
100 ml olive or rapeseed oil
1 pinch salt
1 pinch pepper

You can replace the raisins with dried cranberries.
RECIPE STEPS

Peel, core and quarter the apples. Cut the cabbage in pieces.

Fit the food processing bowl with the midi bowl and the 2mm slicing disc. Slice the apples and red cabbage by running the program.

Remove the midi bowl. Install the mini bowl with the mini blade. Chop the walnut by running the program.

If using dried raisins, rehydrate in a little hot water for 5 minutes then drain. Cut the cheese into strips or crumble using your fingers.

Prepare the cider vinaigrette by fitting the food processing bowl along with the mini bowl and mini blade. Add all the ingredients and run the program until completely mixed.
- 3 tbsp cider vinegar
- 100 ml olive or rapeseed oil
- 1 pinch salt
- 1 pinch pepper
- 3 tbsp lemon juice

Combine all the ingredients in a salad bowl.
Season with the vinaigrette and mix well. Sprinkle over the blue cheese and walnuts.
Serve immediately.
