100 g of caster sugar
350 g of water
175 g of fresh lemon juice
1 small egg white

RECIPE STEPS

Dissolve the sugar in water. Use warm to hot water to dissolve the sugar quickly.

Add lemon juice to the sugar mixture and mix to combine.

Allow to cool if necessary.

Place mixture into Gelato Expert and start the SORBET/GRANITA cycle.

Add the beaten egg white as soon as the cycle starts.

The granita is ready when light starts to flash. Serve immediately.
