Sweet Potato Delight

Serves 4 :
1 leek, sliced
1 medium sweet potato, finely chopped
1 large carrot, finely chopped
3 cardamon pods (remove shells), finely chopped, or 1/2 tsp cardamon powder
10 g ginger, peeled and finely grated
750 ml water
125 ml coconut milk
Salt and pepper
1Add all the ingredients (except the coconut milk, salt and pepper) to a pan over a high heat. Bring to the boil and let the vegetables cook for about 20 minutes.
2Once all the ingredients have softened, add to the blender jug along with the coconut milk. Turn the dial to the SOUPS setting and press AUTO. Let the programme run. If you desire a smoother consistency, run the programme again. Season with salt and pepper then serve.
Chef’s tip

You can also use your Food Processor to make this soup. Simply use the main blade in the main bowl and add the BlenderMix ring to achieve a silky smooth consistency.
