150 g flour
50 g caster sugar
100 g cold butter
1 tbsp brown sugar

Add the flour, caster sugar and diced butter into the bowl fitted with the metal blade. Switch on the machine then run for 30 seconds.

On a lightly floured work surface, roll out the dough to a thickness of ½ cm.

Cut out rectangles of dough using the cookie cutter or a knife. Transfer them onto a baking tray lined with baking paper. Prick all over the surface of the dough with a fork and then sprinkle with brown sugar.
Place in the refrigerator for 20 minutes.

Preheat the oven to 175°C.
Bake for 15 to 20 minutes.
Leave to cool on a wire rack.
