SERVES 14-18 :

225 g unsalted butter, softened

225 g golden caster sugar

1 tsp vanilla extract

3 eggs

250 g self-raising flour

1 tbsp baking powder

1/2 tsp fine salt

5 tbsp (75ml) whole milk

225 g icing sugar

1/2 tsp vanilla extract

2 tbsp whole milk

1 tbsp hundreds & thousands

  • 1- Preheat the oven to 180˚C, gas mark 4. Grease and line a 33cm x 22cm cake tin.
  • 2- Add the butter and sugar to the metal bowl and start the CAKE/PASTRY programme. Run until light and fluffy. Add in the vanilla and eggs. With the programme running, add in the flour, baking powder and salt through the lid. Once combined, add the milk. 
  • 3- Pour the mixture into the cake tin. Level the top and bake for 25 minutes until golden and risen. Set aside to cool in the tin.
  • 4- For the topping, sift the icing sugar into the clean metal bowl along with the vanilla and 2 tbsp milk. Run EXPERT 2 minutes/speed 3A/No heat. Keep the machine running until you achieve a smooth icing adding more milk is necessary. 
  • 5- Drizzle over the now cooled cake and spread out with the back of a spoon. Top with the hundreds and thousands. Slice into squares and serve.
