SERVES 12 cupcake :

180 g flour

60 g unsweetened cocoa powder

1 tsp baking soda

1/2 tsp salt

120 ml buttermilk

60 g sour cream

270 g sugar

2 large eggs

1 tsp vanilla extract

12 ice cream cones

910 g icing sugar, plus more for dusting

455 g unsalted butter, room temperature

1-2 tbsp milk or cream

1 tsp vanilla extract

20 drops green food colouring


For the Cake

  • 1- Pre-heat oven to 180°C. Add paper liners to cupcake tin.
  • 2- Fit the main blade to the main bowl and sift in the dry ingredients, including sugar.
  • 3- Mix together the milk, vanilla, eggs and sour cream in a small bowl.
  • 4- Press AUTO and add the wet ingredients to the main bowl through the feed tube. Let the machine run until fully combined.
  • 5- Scoop about three tablespoons for each cupcake. Bake at 180°C for about 15-20 minutes or until the centre is set.

For the Icing

  • 1- Fit the main blade to the main bowl add the butter. Press AUTO and run to soften the butter. Once softened, add the icing sugar, and vanilla extract. Press AUTO and run until combined. Add the milk a tablespoon at a time until desired consistency is reached.
  • 2- Pour half the icing into a bowl and add the food colouring, mix until combined.

To assemble

  • 1- Cover the cupcake in white frosting. It doesn't have to be smooth, a bit of texture will make it look more like snow.
  • 2- Use a spatula to apply a thin layer of green buttercream to the surface of the cone. This will help the dollops you apply stick to the cone better as well as making the trees totally green (in case your dollops don't give full coverage).
  • 3- Use a small round tip to pipe the ‘leaves' onto the surface of the cone, beginning at the bottom and working to the top.
  • 4- Sift confectioners' sugar onto the cupcake and it's ready to serve.

CHEF’S TIP :

You can use different nozzles to create a different look to the trees. Change up the icing colours to create a reindeer or Santa hat.
