SERVES 4 :

1 large aubergine

1 garlic clove

1 red chili

1/2 lemon juiced

samall handful of mint

handful of pomegranate seeds

olive oil

salt and pepper to taste

crackers


  • 1- Preheat the over to 200. Slice the aubergine in half length ways. Place the skin side down on a baking tray and score the aubergine width ways several times. Drizzle with olive oil and season with salt and pepper. Bake in the over for approx. 30 minutes.
  • 2- Allow the aubergine to cool slightly then scoop out the flesh. Keep this to one side.
  • 3- Fit the min blade to the mini bowl and add the mint, chilli and garlic clove. Press AUTO and chop the ingredients. Once chopped, add the aubergine, lemon juice and salt and pepper. PULSE to combine. Careful not to over-process.
  • 4- Serve the aubergine mixture on top of crackers and top with pomegranate seeds for a delicious canapé.
